I would like to add a title and a bit of introduction for each of my blog categories but I don't seem to be able to get around the way to do that in WixBlog and I do not want to recreate the blog (as a different SEO structure) in CMS.

It is essential to know that Wix doesn't offer a built-in feature to automatically add H1 titles and paragraphs based on selected categories. You have to do it either manually or by using Wix code.
Manual editing
You can manually add H1 titles and paragraphs for each category to your blog template. However, this approach requires editing each template individually whenever you add a new category.
First Access your blog template: Go to the "Pages" section, choose your blog template, and click "Edit."
For each category, within the template, insert an H1 tag and a paragraph where you want the dynamic content to appear.
2. Wix Code
Wix Code is another way to add an H1 title and paragraphs. All you have to do is inject custom code into your blog pages. Once you add the code, it will house the logic to fetch the category information and generate the content based on it.
Use the wixData API to access the current blog post's category data.
Based on the retrieved category, use conditional statements to display the corresponding H1 title and paragraph content.
For example, if you have food blog pages, here's how you can use the Wix Code. Place the code component in your blog template. It checks the label and finds the category. Then, based on the category, it builds the relevant title and description. Apply a conditional statement like the below example:
If the category is "Italian," then show the title "A taste of Italy" and the description "Explore delicious Italian cuisine."
If the category is "Mexican," then show the title "Spicy Flavors of Mexico" and the description "Embark on a culinary journey to Mexico."
And continue the same for each category.....
Though this process needs some coding language and might be confusing, it is an easier option for multiple blogs and categories. Wix has a tutorial that will help you. Refer to their blog to understand better.
