You go to Dashboard and select New Wix Blog. Then from the list you open the desired post and select Save as Draft (on the bottom right button). The post will go in drafts and will be unpublished.
the way Venko suggested is the current workaround to unpublish post - duplicate the post so it appears in the drafts and then delete the published post. I'm adding your votes for the Unpublish feature in the Wishlist.

However, IMHO, this not a "possible feature" but a VERY BASIC FUNCTION MISSING.
This "new" Blog is now several years old and still lacks basic feature of the "old" one.
When starting with wix, i did not even know there was an "old" blog and i feel like beeing fooled using this unfinished software, especially since the "old" blog seems to have more features.
Wix has some really amazing and easy-to-use features but you trip over unfinished work almost every step, wich is pretty frustrating.
Sometimes it is better to take one step back and start in different direction. The new blog is lacking functionalities like old blog but it is modern and it is easier to integrate within site and wix app.

hi there! i really cannot find the button. can you post a screeenshot?
i have two buttons
"cancel" and "publish changes" as well as the small menu where you can chooese "post settings", "choose category" and "save changes"
Then you choose to duplicate the post and you will have it in drafts. Once you make sure that you have the draft post, you erase the published one.

Can you also confirm there is no actual "unpublish" button?
i was really surprised because all the CMS usually have one.
