I have published my first blog post but hidden the "blog" page from the sites menu (I want to get three up before I launch it)...the pages url is the standard..."/blog"...surely just hiding the blog page from the menu doesn't prevent it from being viewable if it manually type in the url with the .com/blog part into the address bar?....Is there a subscription or something I'm missing?

So you actually have two pages named 'Blog', both are hidden. One is empty and another is with the Blog app. The link you posted leads to that empty page. However, if you change the link to www.charlottedetienne.com/blog-1, you'll see that it opens the page with the Blog app.
I advise to delete the empty page and to change the URL of the Blog app page from '/blog-1' to '/blog'.

you are correct - hiding the blog from the menu doesn't mean that people cannot access it by typing the direct url.
It will take couple of weeks to have it possible to hide the blog from the search results (via the pages panel). I guess you'll create more than 3 posts and fully launch your Blog by then... :)
