I'd expected to set up multiple blogs, but since only one blog is allowed per site, I need to configure RSS feeds per category. I don't see that option for the built-in RSS button.

You could maybe use paid plans and offer free plans for each category then set page roles and permissions on each page, then on each page use a custom feed with the specific categories. I don’t know if this would cover what you need?
